Apple Cinnamon Yogurt Parfait

Servings: 1 | Cook Time: 3 minutes

Ingredients:

  • 2/3 cup vanilla Greek yogurt

  • 2 tbsp PB2 powder

  • Cinnamon (measure with your heart)

  • 1/2 apple (chopped)

  • 1 tbsp hemp seeds

  • 1 tbsp chia seeds

  • 1/4 cup walnuts

Instructions:

  1. Chop apple into small chunks

  2. To a bowl, add greek yogurt, PB2, and cinnamon and mix until combined

  3. Top yogurt with apple chunks, hemp seeds, chia seeds, and walnuts, then enjoy!

Greek yogurt is a great protein source, especially for breakfast. It’s so easy to add to a bowl with a few ingredients to make a great tasting breakfast combo that requires zero cooking. If you don’t love greek yogurt, you can substitute it for cottage cheese instead!

Some other fruit options you could use are: pear, peaches, strawberries, blueberries, or banana!

PB2 powder is similar to peanut butter, but without any of the oil. This option is lower in calories than regular PB, but it tastes just like regular peanut butter! You can find it in the aisle right next to the PB jars. If you cannot eat peanut butter, you can use almond butter, or another nut butter instead!

Hemp seeds are a plant protein, high in fiber and omega 3s. They are not absolutely necessary for this recipe, but they are a great addition if you have them at home! You can completely omit these and add extra chia seeds or add a tablespoon of pumpkin seeds instead!
