Egg Cheese and Avocado Roll-ups

This one is for all those looking for a SUPER DUPER quick and simple breakfast to make in the morning! Plus it is high in protein, healthy fats, and fiber so it absolutely fits into a healthy lifestyle!

Egg Cheese and Avocado Roll-ups

Servings: 1 | Total Cook Time 10 minutes

Ingredients:

  • 2 eggs

  • 1 flour tortilla

  • 1/4 cup shredded cheese

  • 1/2 avocado

  • salt

  • pepper

  • garlic powder

  • avocado oil spray

  • salsa or hot sauce

  • side of fruit - berries, apple, orange, banana, etc

  • side of veggies (optional)

Instructions:

  1. In a small bowl, crack two eggs, add seasonings, and whisk together

  2. Heat a medium sized pan on low heat (the pan should be about the same size as the tortilla)

  3. Once pan is hot, spray oil spray, and then pour in the whisked eggs. Do not touch them, let them cook for about 3-4 minutes.

  4. Once eggs are cooked on the bottom but still runny on the top, add your tortilla and press down gently. You want the raw egg to adhere to the tortilla. Cook for another minute or two and then flip the tortilla; the eggs should be fully cooked at this point.

  5. Add shredded cheese to the top of the egg and let the tortilla toast for one minute

  6. Remove the egg and tortilla from the pan, add sliced avocado and salsa (optional), and then roll it up like a burrito. Serve with a side of fruit/and or veggies.
