Loaded Black Bean Nachos

The perfect five minute recipe you didn’t know you needed! These loaded black bean nachos are full of fiber, protein, healthy fats, and most importantly, FLAVOR! Plus they truly only take five minutes to throw together, so they are perfect for a quick and easy dinner or a super fast lunch!

Loaded Black Bean Nachos

Ingredients:

  • tortilla chips (I found these grainless chips from Trader Joes that are DELICIOUS)

  • black beans

  • shredded cheese

  • plain greek yogurt

  • guacamole (or avocado)

  • fresh tomatoes

  • cilantro

  • salsa

  • pickled carrots and/or jalapeños

Instructions:

  1. Layer tortilla chips, black beans, and shredded cheese on a plate, and microwave for 60 seconds, or until cheese is melted

  2. Top with diced tomato, chopped cilantro, guacamole, salsa, pickled carrots, plain greek yogurt and ENJOY!
