Simple Homemade Crepes

My husband and I spent last weekend with my parents and my mom made the most delicious crepes for us for breakfast! The second we got home, I placed a grocery order with all the ingredients to make my own! This recipe is so unbelievably simple, and it tastes like you ordered them from a fancy restaurant! The best, part, you can add whatever toppings and fillings you like! I made two variations: Blackberry Nutella Crepes and Cherry Chia Crepes. Let’s get crepen’!

Simple Homemade Crepes

Servings: 2 | Total Cook Time 20 minutes

INGREDIENTS:

Crepes-

  • 1 cup flour

  • 2 eggs

  • 1/4 cup sugar

  • 1/2 cup milk

  • 1/2 cup water

  • 1/2 tsp vanilla

  • 1/4 tsp salt

  • Butter spray (or coconut oil spray)

Filling/toppings-

  • 2 tbsp nutella

  • 1/2 cup fresh blackberries

  • 1/2 cup frozen cherries

  • 1 tbsp chia seeds

  • 1/2 cup sugar

  • 1/4 cup water

  • 1/2 cup ricotta cheese

Instructions:

  1. To a small pot, add frozen cherries and cook until warm. Add water, sugar and chia seeds, and bring to a boil. Once boiling, remove from heat and transfer to a different bowl to cool down.

  2. To a large bowl, add flour, eggs, and sugar and whisk well.

  3. Once mixed, add milk, water, vanilla, and salt and whisk until smooth.

  4. Heat a large pan over medium heat.

  5. Spray the pan with butter spray and pour 1/4 cup of the crepes mixture into the pan, and rotate the pan to spread the mixture evenly around the inside of the pan.

  6. Cook for two minutes and then flip the crepe and cook for another 2-3 minutes. The crepe should be slightly toasty, but not burnt. Remove the crepe from the pan, and place on a plate.

  7. Repeat steps 5-6 until the mixture is gone. This recipe should make 4 crepes.

  8. To assemble the crepes, lay two crepes flat, add ricotta cheese, the cherry chia seed mixture and either roll up or fold up the crepes.

  9. For the remaining two crepes, lay the crepes flat, add Nutella and fresh blackberries and either roll up or fold up the crepes.

  10. Top the cherry crepes with any remaining cherry chia seed mixture, and top the Nutella crepes with blackberries and a drizzle of Nutella! Top with whipped cream and serve!
