Sweet Potato Breakfast Hash
Nothing screams Fall quite like a sweet potato breakfast hash. Okay well maybe a lot of other things scream Fall more than a breakfast hash, but once you taste this recipe, I guarantee you will think, “Oh yeah, that tastes like Fall time!”
This breakfast hash includes tons of veggies for a morning dose of fiber plus protein to keep you full ALL morning! Paired with a perfect blend of seasonings and a couple fried eggs, this is the PERFECT breakfast for Fall or any time of the year!
This recipe uses an air fryer to cook the hash, but you can certainly use the oven or stovetop. Cooking times may vary depending on the cooking method.
Ingredients:
1 small sweet potatoes (or 1/2 large)
1/2 zucchini
1/2 red potato
4 mushrooms
2 cooked turkey sausage patties
1 tsp pink salt
1 tsp garlic powder
1 tsp paprika
1 tsp rosemary
1 tsp nutmeg
2-3 tbsp olive oil
Instructions:
Preheat air fryer (or oven) to 400 degrees
Chop sweet potatoes, red potatoes, zucchini, and mushrooms and place in a large bowl
Drizzle olive oil over the chopped veggies
Sprinkle seasonings over the chopped veggies and mix well
Place seasoned veggies in the air fryer for 10-15 minutes (flipping/shaking halfway)
While veggies are cooking, dice sausage patties
Combine the sausage with the veggies and cook for another 5 minutes (or until veggies are completely soft)
Remove the hash from the air fryer and serve with fried eggs and fruit

Helpful Tips
Be sure to add the sausage to the air fryer once the veggies have already softened. This keeps the sausage from drying out. Cook the veggies first and then add the sausage the last 5 minutes to just heat it up before serving.
Cut the potatoes smaller than the zucchini. Zucchini softens faster than potatoes, so I chop the zucchini and dice the potatoes. This allows for slightly larger zucchini pieces which helps them from getting too soft and mushy in the air fryer!
You can add any veggies you like. Other great options are bell pepper, onion, squash, or carrots.

Pair with two fried eggs on top
Mix together with eggs to make a scramble
Make a bowl with fried egg, bacon, avocado and salsa
Make a bowl with shredded chicken, avocado and fresh tomato
