Sweet Potato Jalapeño Bites

Get ready, for your new favorite simple recipe! Truly, these sweet potato jalapeño bites are only five total ingredients, and you just cut, bake and sprinkle. You gotta try them!

Sweet Potato Jalapeño Bites

Servings: 2 | Total Cook Time: 45 minutes

Ingredients:

  • 1 large sweet potato

  • 1 fresh jalapeño pepper

  • 1 cup shredded Colby Jack or cheddar cheese

  • Salt

  • Avocado oil spray

Instructions:

  1. Preheat oven to 400 degrees

  2. Wash and dry sweet potato, then cut off the ends. Slice the sweet potato in 1/4 inch rounds.

  3. Place sweet potato rounds on a parchment paper lined baking sheet, spray each round with avocado oil, and season with salt. Bake at 400 for 22 minutes.

  4. Wash and dry jalapeños and then cut into thin rounds. After 22 minutes, remove sweet potato rounds from the oven, add a pinch of shredded cheese on each potato round, and add 1-2 jalapeño slices. Put baking sheet back into the oven and bake for another 5-10 minutes or until the cheese and potatoes are crispy. Remove from oven and let cool before serving.

Take these a step further and add bacon bites to each sweet potato round!

You could absolutely do this with any potatoes! It doesn’t have to be sweet potatoes. They are just as delicious with russet potatoes, red potatoes, or fingerling potatoes! If you do use fingerling potatoes, cut them from top to bottom in half to make little potato boats!

If you have any leftover, throw them in the air fryer to crisp up again! Cook them for 5-8 minutes at 375.
