3 Simple Ways to Eat More Veggies

We could all stand to eat more veggies in our diet. This post will give you three simple ways to up your veggie intake without feeling like you’re eating veggies!

1. Add veggies to your smoothies

Spinach, kale, carrots, zucchini and frozen cauliflower are great veggies to throw in with other smoothie ingredients and give it a good blend. You can’t taste the veggies, but you get all the benefits of them!

Pineapple Peach Smoothie

Ingredients:

• 1 cup frozen pineapple

• 1 cup frozen peaches

• 1 cup frozen cauliflower

• 1 cup spinach

• 1 ripe banana

• 1⁄2 cup unsweetened almond milk

• 1/2 cup plain Greek yogurt

Instructions:

• Combine all ingredients together in a blender and blend until smooth

• Serve in glasses and drink immediately

2. Add veggies to your pasta sauce

Substitute wheat pasta for zucchini noodles or butternut squash! Or you can eat regular noodles and add veggies to the sauce. Finely chop the veggies, add to your tomato sauce, and just like that you get an extra serving or two of veggies.

My favorite pasta sauce additions are:

• Mushroom

• Onion

• Yellow or green bell pepper

• Zucchini

• Fresh garlic

Cook the vegetables together with your sauce until they are soft. Then add in your ground beef or ground turkey, and I guarantee you won’t even notice you’re eating extra veggies!

3. Substitute cauliflower for rice

A great fiber-rich, low-carb option to try is cauliflower rice! It has the same texture and consistency as regular rice! Mix together 1/2 cup of regular rice and 1/2 cup of cauliflower rice. Add whatever meats, veggies, and seasonings you like and enjoy!

You can find cauliflower rice in the frozen veggies section or you can make your own with a head of cauliflower.
