Dates get a bad wrap because, well, let’s be honest, they’re kinda ugly looking.

They are a dried fruit that looks like a super plump prune. Dates are naturally high in sugar, so they make for a great sweet treat that is also high in fiber. Pair them with peanut butter and a sprinkle of cinnamon and my oh my, you have yourself a delicious snack or dessert!

Stuffed dates are naturally sweet and high in fiber

Ingredients

• 4 Medjool Dates

• 2 tbsp Peanut Butter (or any nut butter)

• 1-2 tsp Ground Cinnamon

Instructions

• Pit the dates by making a small slit down the middle of the date and scooping out the pit

• Stuff each date with peanut butter using the tip of a spoon or a knife

• Place the stuffed dates on a plate and sprinkle with ground cinnamon

You can use any type of dates! Just make sure to pit the dates if they are not pitted already.
