Burgers + Sweet Potato Jalapeño Bites

Burger night is my favorite night! My husband and I make burgers a few times a month, and every time we go ALL OUT! You could absolutely adjust this recipe to fit your dietary needs and preferences. Make turkey burgers instead of ground beef or use black bean/veggie patties to make this a vegetarian meal!

I made the burgers on my indoor grill for the first time and they were AMAZING! The process was so much simpler than frying the burgers in a pan, and I was able to cook four patties at a time instead of just two like I usually do in a pan.

Also, can we take a moment to appreciate how beautiful and delicious these sweet potato jalapeño bites are? They are so simple but they tie this meal together so perfectly! I promise, they will be a crowd pleaser!

Burgers + Sweet Potato Jalapeño Bites

Servings: 4 | Total Cook Time: 45 minutes

INGREDIENTS:

  • 4 beef patties

  • Salt

  • Pepper

  • 2 sweet potatoes

  • 1.5 cups shredded cheese

  • 2 fresh jalapeños

  • Avocado oil spray

  • 4 burger buns

  • 4 lettuce leaves

  • 1 medium steak tomato (sliced)

  • 4 slices sliced havarti cheese

  • 2 tbsp salted butter

  • pickles (sliced)

  • pickled carrots

  • 4 cups cubed watermelon

  • thousand island dressing

INSTRUCTIONS:

  1. Preheat oven to 425

  2. Wash and dry sweet potatoes and then cut into 1/2 inch thick rounds. Place sweet potato rounds on a parchment paper lined baking sheet, spray each with avocado oil, and season with salt. Bake at 425 for 20 minutes.

  3. Wash and dry jalapeños and then cut into rounds. After 20 minutes, remove sweet potato rounds from the oven, add a pinch of shredded cheese on each potato round, and add 1-2 jalapeño slices. Put baking sheet back into the oven and bake for another 10-12 minutes or until the cheese and potatoes are crispy. Remove from oven and let cool.

  4. Preheat your indoor grill to sear. Season both sides of each burger patty with salt and pepper, and then add to hot grill. Close the lid and cook for 5-8 minutes and then flip and cook (covered) for another 5-8 minutes.

  5. Once burgers are cooked, remove from grill and transfer to a clean plate. Add a slice of cheese to the top of each burger.

  6. Heat a pan on the stove over low heat and add 2 tbsp butter. Melt the butter and then add the burger buns face down on the pan. Cook for 5 minutes or until buns are golden brown, then remove from pan and add to a plate.

  7. Add thousand island dressing to the tops of the buns and place the patties on the bottoms of the buns. Stack lettuce, tomato and pickles on top of the patties and cover with the top buns.

  8. Serve with sweet potato jalapeño bites, cubed watermelon, and pickled carrots!
