Grilled Salmon Caesar Salad

Caesar salads are my JAM! I love the dressing, the crunchy romaine, the parmesan, the whole shebang! This recipe has all the components of a traditional Caesar salad with a couple extra nutrient rich twists! I add greek yogurt in the dressing for an extra protein boost, pistachios for a fiber rich crunch, and salmon for omega 3s, protein, and healthy fats! You could absolutely air fry some chick peas for an additional high fiber crunchy vegan option! This recipe makes two salads, but you can double or triple it for a week’s worth of meal prepped salads!

Grilled Salmon Caesar Salad

Makes 2 servings | Cook Time: 20 minutes

Ingredients:

  • 2 salmon filets

  • 3 cups romaine lettuce

  • 1 cup radicchio (if you don’t have this, you can just do 4 cups of romaine)

  • 1/2 cup cherry tomatoes (halved)

  • 1 cucumber (diced)

  • 1/4 cup pistachios (shelled)

  • 1/4 cup shaved parmesan

  • Lemon juice

  • Salt

  • Pepper

Caesar Dressing:

  • 1/2 cup plain greek yogurt

  • Juice from 1/2 lemon

  • 1 tbsp dijon mustard

  • 1 tbsp olive oil

  • 1 tsp black pepper

  • 1 tsp salt

  • 1 tsp Worcestershire sauce

  • 2 tbsp capers

  • 2 cloves garlic (grated)

Instructions:

  1. Season salmon filets with salt, pepper, and lemon juice and grill for 8-10 minutes (4-5 min/side)

  2. Assemble your salads with the lettuce, radicchio, veggies, pistachios, and shaved parmesan

  3. Make the dressing by combing all ingredients in a blender and blending until smooth. Pour dressing over salads.

  4. Top with grilled salmon and serve!

If you make multiple servings of this meal, to have on a different day, I recommend reheating the salmon in the air fryer. I usually do five minutes at 375 to crisp up the salmon before adding it to the salad. The Caesar dressing will last in the fridge for up to one week in a sealed container. These are the mini mason jars I use.

To grill the salmon, I used my indoor grill! I got it from Amazon, and I already know I’m going to be using it multiple times each week!
