Healthy Oatmeal Raisin Cookies

For all my oatmeal raisin cookie lovers, here is a healthier cookie with all the oatmeal raisin taste you love, but without the refined sugar! These healthy oatmeal raisin cookies didn’t even last two days in my home, and I bet they won’t last long in yours either!

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1/2 cup coconut sugar

  • 2 large eggs

  • 1 tbsp maple syrup (or honey)

  • 1 tbsp vanilla

  • 1 .5 cups almond flour (or whole wheat flour, oat flour, or coconut flour)

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 1/2 tsp salt

  • 2 cups oats

  • 1 cup raisins

  • 1/2 cup chia seeds

Instructions:

  • Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper or foil.

  • In a large bowl, combine softened butter and coconut sugar. Mix until combined and smooth.

  • Add the eggs to the large bowl and whisk together. Once the mixture is well combined, add the maple syrup and vanilla and mix again. Set the mixture aside.

  • In a medium bowl, combine the flour, baking soda, salt, and cinnamon.

  • Add the dry ingredients to the wet ingredients and mix until combined.

  • Add in the oats, raisins, and chia seeds and fold together until the mixture forms a very sticky ball of dough

  • Using a spoon or cookie scoop, scoop out 1 tbsp of dough and roll into a ball with your hands. Flatten the ball with your fingers or a fork to create a cookie shape and place on the parchment lined baking sheet

  • Bake at 350 degrees Fahrenheit for 12-14 minutes or until the cookies turn a light brown.

  • Remove from the oven and let cookies cool before enjoying.

  • Store in an airtight container for up to a week.
