  • Lemon zest (1/4 lemon or 1 teaspoon)

  • Pinch of salt

  • 2 ounces cream cheese

  • 1/4 teaspoon liquid stevia (or sweetener of your choice - if using agave or maple syrup, do 1 tablespoon)

  • 1/2 teaspoon vanilla extract

  • 1/2 cup fresh strawberries, chopped

  • 1/2 cup plain Greek yogurt (I like Oikos 25g protein)

  • 1-2 tablespoons graham cracker crumbs or crushed Simple Mills Sweet Thins Honey & Cinnamon

Instructions:

  1. In a jar or bowl (with a lid), combine chia seeds, milk, lemon juice, lemon zest, salt, cream cheese, vanilla extract, liquid stevia, and 1/4 cup strawberries, save the other 1/4 cup for the topping.

  2. Mix well to combine, then let the mixture sit for 5 minutes before stirring well again.

  3. Add the lid and place the jar/bowl in the refrigerator for a minimum of 2 hours, or overnight.

  4. When you are ready to eat, add the greek yogurt on top of the chia pudding, then add the remaining 1/2 cup strawberries, and the graham cracker crumbs or crushed sweet thins.
