Ingredients

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp cloves
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 1 tbsp cinnamon
  • 1 cup canned pumpkin puree
  • 1 large egg
  • 1/3 cup vegetable oil or melted coconut oil

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl, mix together all dry ingredients.
  • Once mixed, add in all the wet ingredients (pumpkin, egg, and oil) and gently combine.
  • Use a cookie scoop to scoop the mixture into a muffin tin-lined muffin tray. Only fill each muffin tin 3/4 of the way up to allow the muffins to expand.
  • Tap the tray on the counter to set the batter and then bake for 20-25 minutes at 350 degrees Fahrenheit.
  • Remove muffins from oven and let cool for 5 minutes before enjoying!
