  • 2 cups raw pecan halves
  • 1 ½ tablespoons melted salted butter or coconut oil
  • 3 tablespoons maple syrup
  • 2 tablespoons brown sugar
  • 1 tablespoon vanilla bean paste or vanilla extract
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon salt

Instructions

  • Set your oven to 375°F and line a sheet pan with parchment paper.
  • In a large mixing bowl, combine the pecans, melted butter, maple syrup, brown sugar, vanilla, pumpkin pie spice, and salt. Toss until the pecans are fully coated.
  • Spread the coated pecans evenly on your prepared baking sheet. Roast for 7 minutes, give them a good stir, then roast for an additional 3–5 minutes, keeping a close eye toward the end so they don’t burn.
  • Once roasted, use a spatula to spread out the pecans so they don’t stick together as they cool.
  • Let cool completely before serving or storing. They’ll crisp up as they cool.
  • Store in an airtight container at room temperature for up to a week.
