BBQ Chicken Teriyaki Bowls

Full of flavor, packed with nutrients, and ready in under 20 minutes, this dish is sure to become a staple in your household. Like and save this recipe to make for dinner this week!

BBQ Chicken Teriyaki Bowls (3-4 servings):

Ingredients:

  • 2-4 cups rice (1/2 cup - 1 cup per serving)

  • 1 bag Trader Joe's Frozen BBQ Chicken Teriyaki

  • 3-4 cups raw veggies, chopped - zucchini, squash, broccoli, carrots, green beans, whichever you like.

  • 2 green onions, chopped

  • 2 tablespoons sesame seeds

  • 1 tablespoon avocado oil

  • 4 cloves garlic, minced/grated

  • Salt - to taste

  • Sriracha (optional)

Instructions:

  1. Cook the Rice: If using a rice cooker, wash the rice, then add water and cook for 60 minutes. If using leftover rice or microwavable rice, skip this step, and just microwave your cooked rice before assembling your bowls.

  2. Prepare the Chicken:

    • Add the full contents of the Trader Joe's Frozen BBQ Chicken Teriyaki into your air fryer, removing the two sauce packets.

    • Air fry the chicken at 375°F for 10-15 minutes until crispy.

    • Add the frozen sauce packets, unopened, back into the original bag along with hot water. Let the sauce packets thaw in the hot water for 8-12 minutes.

  3. Cook the Veggies:

    • While the chicken is in the air fryer, steam or sauté your veggies.

    • To sauté, add avocado oil to a pan, along with minced or grated garlic. Let cook for 1-2 minutes or until fragrant, then add in the raw veggies. Season with salt.

    • Cook the veggies until slightly charred and soft, then remove the pan from the heat.

  4. Finish the Chicken:

    • Once the chicken is crispy, add the chicken to a bowl, coat with the two sauce packets, mix well, and then add back into the air fryer. Cook for another 3-5 minutes at 375°F.

  5. Assemble the Bowls:

    • To serve, add cooked rice to a bowl, add the air-fried bbq teriyaki chicken, and the sautéed or steamed veggies.

    • Top with chopped green onion, sesame seeds, and sriracha (optional).
