Shrimp & Crab Ceviche

This Shrimp & Crab Ceviche is one of my all-time favorite meals! I love that it's simple, quick, and requires no cooking. It's perfect for meal prep or feeding a large family and can be customized to fit your preferences and dietary needs. Let’s dive into the recipe!

Shrimp & Crab Ceviche (4-5 servings)

Ingredients:

  • 🍤 1.5 pounds cooked shrimp

  • 🍤 1 package (24 oz) imitation crab meat

  • 🍤 1 cucumber

  • 🍤 3 Roma tomatoes

  • 🍤 1 small red onion

  • 🍤 1 bunch cilantro (just the leaves)

  • 🍤 1 jalapeño

  • 🍤 Juice of 2 limes

  • 🍤 Juice of 1 large lemon

  • 🍤 Salt (to taste)

  • 🍤 Pepper (to taste)

  • 🍤 Garlic powder (to taste)

  • 🍤 2 avocados

  • 🍤 Shrimp cocktail sauce (optional)

  • 🍤 Tostadas (optional)

  • 🍤 Valentina/your choice hot sauce (optional)

Instructions:

  1. Defrost the Shrimp:

    • Add hot water to the bag of shrimp and let it thaw for 5 minutes. Drain the water, and add more hot water to the bag, letting it thaw for another 5 minutes.

    • Drain the water, remove the tails, and pat dry before adding the shrimp to a large bowl.

  2. Chop the Veggies and Cilantro:

    • Dice the cucumber, Roma tomatoes, red onion, and jalapeño. Roughly chop the cilantro leaves.

    • Add all the chopped veggies and cilantro to the bowl with the shrimp.

  3. Prepare the Crab Meat:

    • Chop or shred the imitation crab meat and add it to the bowl.

  4. Season the Ceviche:

    • Add the juice of 2 limes and 1 large lemon to the bowl. Season with salt, pepper, and garlic powder to taste (measure with your heart—you can always add more later).

  5. Mix and Refrigerate:

    • Give it all a good mix and refrigerate for at least an hour to let the flavors meld together.

  6. Serve:

    • Serve the ceviche in bowls or on top of tostadas.

  7. Add Toppings (Optional):

    • Add additional toppings if desired: shrimp cocktail sauce, avocado slices, and hot sauce (I like Valentina).
