
Have you ever eaten a salad that was so enjoyable, it didn’t even taste like a salad? This recipe is kind of like that! It’s full of deliciously seasoned ground turkey, high fiber black beans, fresh herbs and veggies, and the best part, CHEESE AND SOUR CREAM!!!! Let’s do it!
Ground Turkey Taco Salad
Servings: 4 | Cook Time: 30 minutes
INGREDIENTS:
- 1 pound ground turkey meat
- 1 can black beans (drained)
- 1 can corn (drained)
- 1 cup shredded cheese
- 2 roma tomatos (diced) or 2 cups cherry tomatoes
- 2 cups romaine lettuce (chopped)
- 2 avocados (sliced or cubed)
- 1 packet taco seasoning
- 2 tbsp avocado oil
- 1 cup sour cream
- 1/2 cup cilantro (optional)

INSTRUCTIONS:
- In a large pan or skillet, heat avocado oil over medium heat. Once warm, add the ground turkey. Cook turkey meat until fully browned, there shouldn’t be any pink color left.
- Once turkey is cooked, add the taco seasoning and mix well, then remove from heat.
- Chop veggies (tomato, lettuce, avocado)
- In a bowl, combine black beans and corn, and microwave for 60-90 seconds or until warm.
- To a plate or bowl, add cooked turkey, warmed beans and corn, shredded cheese, tomatoes, lettuce, avocado, sour cream, and cilantro.
- Serve alone, with a tortilla or with tortilla chips!
