Healthy Adult Lunchable

One of my favorite things EVER as a kid was a ham, cheese, and cracker Lunchable. Sure, I liked the pizza ones and the nachos too, but there was also just something about stacking the cracker with a piece of round meat and a rectangular slice of cheese.

As an adult, things haven’t changed much. I still enjoy a snack plate style lunch, but the difference is now, I know my body needs certain nutrients to get me through the day! So, I decided to “adultify” my snack plate into a healthier Lunchable, perfect for my adult body! The coolest part, I add everything to a muffin tray to separate all the food items, JUST LIKE IN A LUNCHABLE!

The great thing about this healthy adult lunchable idea is that you can customize it according to your favorite things to eat. If you don’t like apples, switch it for some berries. Maybe you are vegetarian and want to swap out the ham and cheese for a protein bar or your favorite vegetarian option! The combinations are endless!

This particular combination includes a great balance of protein, carbs, healthy fats, fiber, and a sweet treat to help you feel full and satisfied until your next meal!

INGREDIENTS:

  • Canadian bacon
  • Cheddar cheese
  • Carrot sticks
  • Cherry tomatoes
  • Apple slices
  • Trader Joe’s Raisin Rosemary Crisps crackers
  • Homemade Garlic Hummus
  • Chocolate covered almonds

INSTRUCTIONS:

  1. Cut Canadian bacon and cheese into small squares
  2. Slice apple and carrots (if needed)
  3. Place the ingredients in separate compartments of the muffin tray to make a Lunchable-like snack tray
  4. Share with someone, or don’t!

HELPFUL TIPS

You can use any type of muffin tray. I prefer the six-count tray because I only need to fill six compartments! If you are making a healthy adult lunchable for you and your spouse, or for your kids, you can certainly use a tray with 12-24 different compartments!

Use muffin tin liners for easier clean up! Place the liner in the muffin tray, fill it up with your dip(s), and then throw out the liner when you’re done!

Think NUTRIENTS! When choosing foods to add to your lunchable, think of foods with high protein like a boiled egg and beef jerky, or foods with healthy fats and fiber like nuts, seeds, carrots, and fruits!

Add some fun! Don’t forget to add fun foods too like chocolate, or a cubed up Rice Krispies Treat!

  • Beef jerky
  • Babybel cheese
  • Boiled egg
  • Turkey + cheese pinwheels
  • Greek yogurt
  • Berries
  • Grapes
  • Pear slices
  • Kiwi
  • Bell pepper slices
  • Cucumber rounds
  • PB + banana sandwiches
  • PB&J Sandwich (quartered)
  • Chips and guacamole
  • Chips and salsa
  • Whole grain crackers
  • Goldfish crackers
  • Veggie chips
  • Pretzels
  • Peanut butter
  • Chocolate chips
  • Trail Mix
