Low Carb Spaghetti & Meatballs

My husband requested spaghetti and meatballs this week, so I whipped up this quick & easy, low carb, high fiber, high protein version! While there’s absolutely nothing wrong with regular spaghetti noodles, I decided to mix it up with a low carb option this time around. This dish has become a favorite in our household, and I hope you love it as much as we do!

Ingredients (4 servings)

  • 1 pound ground beef
  • 3/4 cup Italian breadcrumbs
  • 1 large egg, beaten
  • 3 tablespoons fresh parsley (plus more for garnish)
  • 3 tablespoons grated parmesan cheese (plus more for garnish)
  • 3 cloves garlic, grated
  • 1 medium zucchini (or 2 cups, chopped)
  • 2 cups mushrooms, chopped
  • 24 oz jar spaghetti sauce (I like Rao’s)
  • 4 packages Miracle Noodles (or 1/2 lb regular pasta)
  • 2 tablespoons avocado oil
  • Salt (to taste)
  • Pepper (to taste)
  • Garlic powder (to taste)

Instructions

1. Preheat the Oven

Preheat your oven to 350 degrees Fahrenheit.

2. Prepare the Meatball Mixture

In a medium-sized mixing bowl, combine the ground beef, breadcrumbs, beaten egg, fresh parsley, parmesan cheese, and grated garlic. Mix everything together until well combined.

3. Form the Meatballs

Using a cookie scoop, scoop up portions of the ground beef mixture and roll them into balls with damp hands. Place the rolled meatballs in a baking dish or on a baking sheet. Continue until all the meat mixture has been formed into meatballs.

4. Bake the Meatballs

Bake the meatballs at 350°F for 15-20 minutes, or until fully cooked through (internal temperature of 160 degrees).

5. Prepare the Sauce and Veggies

While the meatballs are cooking, heat avocado oil in a pan over medium heat. Add the chopped zucchini and mushrooms, season with salt, pepper, and garlic powder, and cook until soft.

6. Combine with Sauce

Add the jar of spaghetti sauce to the pan with the cooked veggies, stir to combine, and bring to a light simmer.

7. Add Meatballs to Sauce

Once the meatballs are cooked, add them to the pan with the sauce and veggies, stirring to coat the meatballs thoroughly.

8. Serve

Drain the liquid from the Miracle noodles, then add noodles to a microwave safe plate or bowl and microwave for 60 seconds. Add the warmed noodles (or your choice of cooked pasta noodles) to a plate. Top with the meatballs and sauce, and garnish with fresh parsley and grated parmesan cheese.
