Easy Shrimp Pho

My husband and I love this super quick and yummy Shrimp Pho recipe! It’s great for when you need a meal on the table ASAP or when you’re craving something warm and delicious. This recipe is perfect for those busy weeknights when you want a comforting and nutritious meal without spending hours in the kitchen.

Note, you can absolutely make your own broth for a more traditional recipe or use a different protein! I love simplifying meals when possible and making quick and healthy meals in minutes. Feel free to do what works best for you and your family.

Shrimp Pho (Serves 2)

Ingredients:

  • 2 tablespoons avocado oil
  • 1 yellow onion, quartered
  • 5 cloves garlic, peeled
  • 1 carton (32 oz.) Pho Broth
  • 1/2 pound shrimp, thawed (you can use cooked or raw)
  • Rice noodles (one noodle bunch per person/serving)
  • Optional toppings: lime wedge, sliced jalapeño, green onion, cilantro, bean sprouts, mint, basil, radish
  • Optional sauces: Hoisin sauce, sriracha

Instructions:

  1. Sauté Aromatics:
    • Add avocado oil to a large pot and bring to medium heat. Add the quartered onion and garlic cloves to the pan. Sauté until charred (about 1-2 minutes), flipping often to ensure the garlic doesn’t burn.
  2. Simmer Broth:
    • Pour in the pho broth, cover with a lid, and let it simmer for 5-10 minutes. The longer it simmers, the more flavorful your pho will be.
  3. Cook Noodles:
    • In a separate pot, bring water to a boil, then remove the pot from heat. Immediately add in the rice noodles and let them cook/soften for 5-8 minutes, or until they reach your desired softness.
    • Once the noodles are soft, drain the water from the pot and set the noodles aside.
  4. Cook Shrimp:
    • Add the shrimp to the simmering broth, cover, and let cook for 2-3 minutes. If using raw shrimp, cook for 3-4 minutes or until they turn pink.
  5. Remove Aromatics:
    • Remove the onion and garlic from the broth and discard.
  6. Assemble Pho:
    • Add cooked rice noodles to two serving bowls and spoon the shrimp broth over the top.
  7. Add Toppings:
    • Add your desired toppings and sauces, and enjoy!
