Nectarine Cottage Cheese Bowl

If you’ve seen any of my previous posts, you know I’m a big believer in eating a high protein, high fiber breakfast to fuel your body for the day! This recipe does exactly that! You can make this breakfast in five minutes (or less) and take it with you out the door! It is simple, quick, full of nutrients, and only four ingredients.

Ingredients:

  • 1/2 cup cottage cheese
  • 1 nectarine
  • 2 tbsp pumpkin seeds
  • 1 tbsp sunflower seeds

Instructions:

  • Dice up a nectarine into small, bites sized pieces
  • To a bowl, add the cottage cheese, diced nectarine, pumpkin seeds, and sunflower seeds

Helpful Tips:

If you are not a cottage cheese fan, I totally get it! You can use greek yogurt instead! Greek yogurt is a great alternative because it is also high in protein like cottage cheese. If you are not a fan of dairy, or you only eat dairy free, search for a high protein dairy free yogurt! Aim for 10-20 grams if possible.

Feel free to use whatever fruit you have in the fridge. I tend to use whatever is in season, so currently nectarines, peaches, and berries are delicious and ripe right now! Other great options throughout the year are: canned pineapple, canned peaches, cherries, cantaloupe, apples, grapes, or pomegranate seeds.

Like the fruit, you can use whatever nuts or seeds you prefer or have on hand. I also use macadamia nuts, walnuts, sliced or whole almonds, pistachios, or hemp seeds for this recipe. Nuts and seeds add fiber, protein, healthy fats, vitamins, minerals, and an extra crunch which I love!
