
Lately I have been in a salad mood, and this recipe is my current go to salad combo! It is so easy to throw together in under 5 minutes, and it’s totally customizable to whatever you have in the fridge! In my fridge, we always have taco/nacho related items such as tomato, cilantro, shredded cheese, beans, and pickled carrots. Combining these together with a store bought salad kit and tortilla chips on the side makes for a very satisfying meal full of nutrients like protein, fiber, vitamins, and minerals! I mean, who doesn’t love chips?
Black Bean Taco Salad
Servings: 1 | Total Cook Time: 5 minutes
INGREDIENTS:
- 1/2 bag of Taylor Farms Salsa Ranch Chopped Kit (12.45 oz bag)
- 1/4 cup shredded cheese
- 1/2 cup black beans (canned)
- 1/2 Roma tomato (or 1/2 cup pico de gallo)
- 1/2 avocado
- 1/4 cup cilantro
- Tortilla chips, Fritos, or Doritos (I’ve been loving these Tapatio Doritos or the Flamin Hot Doritos)

INSTRUCTIONS:
- Add 1/2 of the salad kit into a bowl along with the tortilla strips, shredded cheese and 1/2 of the dressing from the kit
- Chop tomato, avocado and cilantro, and add to the salads. Add 1/4 cup shredded cheese and 1/2 cup black beans to salad.
- Top with crushed tortilla chips/Doritos OR use the chips as spoons to scoop up the salad and eat it without a fork

For extra protein, you could also add a big dollop of plain greek yogurt to the top of the salad or add some crispy tofu. The plain greek yogurt tastes just like sour cream!
