
I created this recipe entirely on a whim this week, and it turned out to be SO DELICIOUS, I’m adding it to my weekly rotation! Don’t you just love when that happens?
This recipe is so customizable – you can make it vegetarian by using tofu, tempeh, or edamame, you can use whatever vegetables you have on hand, and you can choose whatever noodles you like best! I had these Miracle Noodles in the cupboard and finally mustered the courage to give them a try, and honestly, I was impressed! the texture is kind of off and gummy, but it didn’t bother me. Plus they are low carb, if that’s what you’re into!

Chicken & Veggie Stir Fry with Pork Gyoza
Servings: 2 | Total Cook Time: 30 minutes
Ingredients:
- 1 bag Miracle Noodles (drained)
- 1 cup chopped broccoli
- 1/2 cup shredded carrots
- 1 can baby corn (drained)
- 1 can water chestnuts (drained)
- 2 cooked chicken thighs (chopped)
- 1/3 cup coconut aminos
- 1 tbsp coconut sugar
- 1 tbsp corn starch
- 1 clove garlic (mined)
- 1 tsp fresh ginger (minced)
- 2 tbsp chili sesame oil (I found this at Trader Joes, but any chili oil or sesame oil would work)
- 10-12 pieces pork gyoza potstickers
- 2 tbsp water
Instructions:
- Heat 1 tbsp chili sesame oil in a medium sized pan on medium heat. Once hot, add frozen pork gyoza and cook for 5 minutes. Once brown, flip each gyoza, and brown for another 4 minutes. Then add 2 tbsp water to the pan, and cover with a lid. Steam the gyoza for 4-6 minutes or until fully cooked through, then remove from pan and add to a plate.
- In a small bowl, add coconut aminos, minced garlic, minced ginger, coconut sugar, and corn starch, and mix well until combined, then set aside.
- In a large pan or wok, heat 1 tbsp chili sesame oil on medium heat. Once the oil is hot, add broccoli and shredded carrots. Cook until soft (5-8 minutes), and then add baby corn, water chestnuts, and chopped cooked chicken thighs. Add in the coconut amino sauce and bring to a boil to thicken the sauce. Once sauce thickens, add your noodles and mix well to coat in the sauce.
- Add the stir fry mixture to a plate, and serve with gyoza!

My husband absolutely loved this meal, and he’s a picky eater! I will definitely be buying more of those Miracle Noodles for more stir fry and pasta dishes!
As I mentioned, this chicken and veggie stir fry recipe can be fully customized to meet your family’s preferences, or to use up whatever leftovers you have in the fridge. Just add vegetables and protein for a complete and balanced meal! You can skip the gyoza entirely if you want, or get veggie potstickers instead!
