
One of my favorite things to buy from the grocery store is a prepackaged salad kit. They are so convenient, you don’t need to buy individual vegetables, and they help cut down immensely on the chopping time! The only thing that bothers me about salad kit is they don’t usually have any protein, so you do need to add protein for a filling and satisfying salad.
That’s exactly what I did here! I used a salad kit, added some protein, threw in a few other fun ingredients to make a delicious and nutritious simple meal. It’s also worth mentioning, my husband LOVED this salad, and he is not a salad person!
Ground Bison Taco Salad
Servings: 2 | Total Cook Time: 20 minutes
INGREDIENTS:
- Taylor Farms Salsa Ranch Chopped Kit
- 1 pound ground bison
- 1/2 cup shredded cheese
- 1 cup black beans (canned)
- 1 roma tomato
- 1 avocado (chopped)
- Pico de gallo
- Crispy jalapeño pieces (optional)
- 3 tbsp taco seasoning
- 1 tbsp olive oil

INSTRUCTIONS:
- To a medium sized pan, heat olive oil and then add ground bison. Cook until browned (about 12-15 minutes), then add taco seasoning and mix well.
- Divide salad kit contents into two bowls.
- Chop tomato and avocado and add to the salads. Add 1/4 cup shredded cheese and 1/2 cup black beans to each salad.
- Top with cooked ground bison, crispy jalapeño pieces (optional), and salad kit dressing.
To make this meal vegetarian, simply omit the ground bison and just add more black beans and cheese to the salads. You could also add a big dollop of plain greek yogurt to the top of the salads for an additional protein boost. The plain greek yogurt tastes just like sour cream!
