This Peachy Matcha Frappe combines the juicy sweetness of ripe peaches with the earthy notes of matcha, all wrapped up in a creamy coconut milk base. It’s a delightful and refreshing drink that’s perfect for any occasion.
Ingredients:
- 1/2 fresh peach
- 2 tablespoons water
- 1-2 tablespoons Torani Sugar Free Peach Syrup
- 2-3 teaspoons matcha powder
- 1 cup (8 ounces) coconut milk
- 1 cup ice
- 1/4 teaspoon xanthan gum

Instructions:
- Prepare the Peach Puree:
- Begin by slicing the fresh peach and removing the pit. Place half of the peach into a blender. Optional: remove the skin from the peach for a smoother puree.
- Add 2 tablespoons of water and 1/2 tablespoon of Torani Sugar Free Peach Syrup to the blender.
- Blend until the mixture is smooth and creamy.
- Set Aside the Peach Puree:
- Pour the peach puree into a separate cup and set it aside.
- Blend the Matcha Frappe:
- In the same blender, add 2-3 teaspoons of matcha powder.
- Pour in 1 cup of coconut milk, followed by 1 cup of ice.
- Add 1/4 teaspoon of xanthan gum to help thicken the frappe.
- Finally, add 1 tablespoon of Torani Sugar Free Peach Syrup.
- Blend on high until the mixture is smooth and well combined.
- Assemble the Frappe:
- Take a serving glass and pour half of the peach puree into the bottom.
- Gently pour half of the matcha frappe on top of the peach puree.
- Add the remaining peach puree and the remaining matcha frappe to create a beautiful layered effect.
- Serve and Enjoy:
- Your Peachy Matcha Frappe is ready to enjoy! For an extra touch, garnish with a slice of peach or a sprinkle of matcha powder.

To make this drink as an Iced Peachy Matcha Latte instead of a frappe, make the peach puree the same way, and then make an iced matcha latte. In a bowl, sift your matcha and add warm water. Whisk the mixture until frothy. To a cup, add peach puree, ice, coconut milk, peach syrup, and the matcha over the top! Stir, and enjoy your Iced Peachy Matcha Latte.

What Is Xanthan Gum and Do I Need It?
Xanthan gum powder is a thickening agent that helps improve the overall texture of the frappe. It binds together the liquid and the ice to create a smooth homogenous texture. Without the xanthan gum, the ice and liquid will separate, meaning you’ll slurp up all the flavor and liquid, and you’ll be stuck with a cup of flavorless ice. Many coffee shops use xanthan gum as an ingredient in their blended coffees! You’ll see ever Starbucks Frappuccino has xanthan gum in the ingredients list.
I very much recommend using xanthan gum in frappe recipes because it makes a world of a difference in the overall texture of the frappe. You only need a tiny bit – 1/4 of a teaspoon – and I promise it will elevate your at home frappe game!
