
Starbucks FINALLY did it!
If your favorite fall Starbucks order has been a Brown Sugar Oatmilk Shaken Espresso topped with Pumpkin Cream Cold Foam, you no longer have to customize your drink to get it. Starbucks officially put the combination on the fall 2026 menu as the Iced Pumpkin Cream Shaken Espresso, and obviously, we’re making it at home!
This drink combines a frothy brown sugar and cinnamon shaken espresso with creamy oat milk and a creamy layer of pumpkin cream cold foam.
And the homemade version is surprisingly simple.
You can use store-bought brown sugar syrup and pumpkin sauce to make this incredibly quick, OR make both components completely from scratch using my homemade recipes:

Ingredients
Brown Sugar Oat Milk Shaken Espresso
- Brown Sugar Syrup: You’ll need 1–2 tablespoons, depending on how sweet you like your coffee. For the easiest option, use Torani Brown Sugar Syrup. Or make it completely from scratch using my easy Homemade Brown Sugar Syrup recipe!
- Espresso: You’ll need 3 shots of espresso. Blonde espresso is especially delicious here and gives you that Starbucks-inspired flavor. If you’re unfamiliar with how to make espresso, see this post for 5 Ways to Make Espresso at Home.
- Blonde espresso here simply means the coffee used to brew the espresso is a light roast coffee.
- Ground Cinnamon: Just a sprinkle goes into the shaker with the espresso and brown sugar.
- Ice: Don’t be shy! Shaking the espresso with plenty of ice chills it quickly while creating that signature frothy texture.
- Oat Milk: You’ll need approximately 4–6 ounces, or adjust to taste. Feel free to use any milk of choice if you’re not an oat milk fan.
Pumpkin Cream Cold Foam
- Pumpkin Sauce: Use 1 tablespoon Torani Pumpkin Pie Sauce for an easy store-bought option. Want to make it from scratch? Make my Homemade Pumpkin Syrup instead!
- 2% Milk: The milk helps thin out the heavy cream just enough to create a pourable, frothy cold foam.
- Heavy Cream: This is what gives us that thick, creamy cold foam texture.
- Pumpkin Pie Spice: Finish with a sprinkle over the top!

How to Make an Iced Pumpkin Cream Shaken Espresso
1. Shake the espresso
To a cocktail shaker or mason jar with a tight-fitting lid, add:
- 1–2 tablespoons brown sugar syrup
- 3 shots freshly brewed espresso
- A sprinkle of ground cinnamon
- A generous handful of ice
Secure the lid and shake vigorously until the espresso is cold and super frothy.
That frothy texture is part of what makes a shaken espresso different from simply pouring espresso over ice!
Note, some brewing methods will produce greater amounts of foam. For example, instant espresso powder will give you a significantly more aerated foam than espresso brewed from an espresso machine.



2. Add the oat milk
Pour the entire shaken espresso mixture, including the ice, into a glass.
Add 4–6 ounces oat milk, adjusting to your preferred level of creaminess.

3. Make the Pumpkin Cream Cold Foam
In a small glass, combine:
- 1 tablespoon pumpkin sauce or syrup
- 2 tablespoons 2% milk
- 3 tablespoons heavy cream
Use a handheld milk frother to froth until the mixture becomes thick, creamy, and pourable.



4. Put it all together
Slowly pour the pumpkin cream cold foam over your shaken espresso.
Finish with a sprinkle of pumpkin pie spice and ENJOY!

This is one of those recipes you can make as easy or as homemade as you want.

I especially love this option if you make coffee at home regularly because you can prep both syrups ahead of time and use them for fall drinks throughout the week.

How to Make It Lower Sugar
This drink is incredibly easy to adjust depending on your preferences.
For a lower-sugar version:
- Use less brown sugar syrup. Start with ½–1 tablespoon instead of 1–2 tablespoons.
- Choose a sugar-free brown sugar-flavored syrup if you have one you enjoy.
- Use less pumpkin sauce/syrup in the cold foam or use a sugar free option.
- Choose an unsweetened oat milk or another unsweetened milk.
You can also prioritize where you want the sweetness. For example, keep the pumpkin cold foam as written and reduce the brown sugar syrup in the shaken espresso.
Can I Make This Dairy-Free?
Yes!
The shaken espresso itself is already dairy-free when made with oat milk.
For the pumpkin cold foam, use a plant based milk instead of the 2% milk, and use a dairy free heavy cream (yes, this is an option at the grocery store)!

Do I Need an Espresso Machine?
Nope!
While traditional espresso will give you the closest copycat experience, you can absolutely make an espresso-style coffee base using another method.
You could use a pod machine, instant espresso powder, moka pot, AeroPress, or another concentrated coffee option. See detailed examples here on my post: 5 Ways to Make Espresso at Home!
The important thing is that you use a strong, concentrated coffee base so the coffee flavor isn’t lost once you add oat milk, ice, and pumpkin cold foam.
Can I Turn This Into Cold Brew or Iced Coffee?
Absolutely!
Skip the shaken espresso and combine brown sugar syrup with cold brew or freshly brewed iced coffee, add a splash or your milk or cream of choice (optional), and finish with pumpkin cream cold foam.
