Starbucks Pistachio Cortado

Starbucks just launched a brand new Pistachio Cortado this year, and if you love nutty, espresso-forward drinks, this one is definitely worth recreating at home. It’s warm, cozy, lightly sweet, and perfectly balanced with its rich espresso, sweet and nutty pistachio flavor, and finished with a buttery topping.

Like all Starbucks cortados, it’s an 8-ounce drink that costs almost as much as a full-size latte. Luckily, it’s incredibly easy to make at home with just a few ingredients and the right espresso-to-milk ratio.

What Is a Cortado?

Before diving into the pistachio version, let’s talk about what a cortado actually is.

Traditionally, a cortado is a small hot coffee drink made with equal parts espresso and steamed milk. The milk is steamed and has a velvety smooth texture, and the drink is meant to be coffee-forward, smooth, and balanced — not overly milky or sweet. Classic cortados are usually 4 ounces.

How the Starbucks Cortado Is Different

Starbucks puts its own spin on the traditional cortado:

  • Size: Starbucks makes their cortado an 8-ounce drink instead of the traditional 4 ounces.
  • Ratio: This shifts the ratio from 1:1 to closer to 1:3 espresso to milk.
  • Espresso Style: Starbucks uses blonde ristretto shots, which are typically bolder and less bitter than standard espresso shots.

What Are Ristretto Shots?

“Ristretto” means restricted. A ristretto shot is brewed using the same amount of coffee but with less water and a shorter extraction time.

Compared to a regular espresso shot, ristretto shots are:

  • More concentrated
  • Sweeter and richer
  • Less bitter
  • Slightly smaller in volume

For this Pistachio Cortado, Starbucks uses blonde roast ristretto shots, which adds a light, nutty, almost buttery coffee flavor that pairs beautifully with pistachio.

Can You Make Ristretto Shots at Home?

With an Espresso Machine

Yes — if you have an espresso machine, you can use light roast coffee beans (these are my personal favorite), and pull the ristretto shots by shortening the extraction and aiming for a 1:1 coffee-to-espresso output ratio.

For example:

  • Use 18 grams of coffee inside a double shot basket
  • Stop the shot early (at about 13g grams) to yield about 18 grams of espresso
  • Repeat the process using 9 grams of coffee inside a single shot basket and stop the extraction early (at about 4 grams) to yield about 9 grams of espresso.
  • This process will give you 3 ristretto shots.

Without an Espresso Machine

If you don’t have an espresso machine, don’t stress. You can still make a very similar drink by using:

Ingredients You’ll Need

Here’s everything you need to make your own Starbucks Pistachio Cortado at home:

  • 1 tablespoon pistachio syrup
    You can use a store-bought pistachio syrup or my Homemade Pistachio Syrup.
  • 3 blonde ristretto shots
    Brew using a light or blonde roast coffee. Regular blonde espresso shots work great if ristretto isn’t an option.
  • 5 ounces whole milk, steamed
    Starbucks uses whole milk for this drink, but feel free to use any milk of choice.
  • Brown butter topping
    Starbucks adds a brown butter powder finish. I like using McCormick Brown Butter Seasoning for an easy at-home option.

How to Make a Starbucks Pistachio Cortado at Home

  1. Add pistachio syrup
    Add 1 tablespoon pistachio syrup to an 8-ounce cup.
  2. Brew the espresso
    Pull 3 blonde ristretto shots (or 3 regular espresso shots if that’s easier) directly over the syrup, and stir to combine.
  3. Steam the milk
    Steam 5 ounces of whole milk using a steam wand or an electric milk frother.
  4. Assemble the drink
    Pour the steamed milk over the pistachio espresso mixture.
  5. Finish with topping
    Sprinkle a small amount of brown butter topping over the drink and enjoy immediately.

How to Steam Milk at Home

You don’t need a café setup to steam milk — here are easy at-home options:

  • Steam Wand: If your espresso machine has one, steam the milk until hot and velvety.
  • Electric Milk Frother: Use the hot setting to heat and texture the milk.
  • Handheld Frother: Heat milk in the microwave or on the stove, then froth until lightly foamy.

The goal is hot, velvety smooth milk — perfect for a cortado.

Can I Make This Dairy-Free?

For a dairy free version:

  • Use barista-style oat milk, extra creamy almond milk, or any dairy free milk you’d like
  • Omit the brown butter powder

Sugar-Free Option

To make this drink sugar-free:

  • Use a sugar-free pistachio syrup using allulose instead of cane sugar
  • Skip or reduce the brown butter topping

The drink will still be nutty, rich, and coffee-forward, just without the added sugar!
