If you’ve been around here for a while, you already know how much I love recreating coffee shop favorites at home, especially the ones that mysteriously disappear from the Starbucks menu.
One syrup I used to absolutely adore was their Toffee Nut Syrup. It added the most delicious, buttery, nutty flavor to lattes, cold brews, and when paired with their white mocha sauce, it was sooo lovely. Then one day…it was just gone.
Ever since, I’ve been on a mission to recreate that cozy, toasty flavor in my own kitchen, and this homemade Toffee Nut Syrup might be even better than the original. It’s rich, buttery, perfectly sweet, and has that signature nutty warmth that pairs beautifully with espresso, milk, or even drizzled over pancakes and french toast.
What Does Toffee Nut Syrup Taste Like?
Toffee Nut Syrup tastes like buttery caramel candy meets toasted nuts. Imagine if salted caramel and almond brittle had a baby. It’s sweet, warm, and a little indulgent without being overpowering.
Where salted caramel leans salty and sharp, toffee nut is rounder, toastier, and more buttery. It adds a nostalgic candy-shop flavor that’s so good in both hot and iced drinks.

Why You’ll Love This Recipe
- Better than Starbucks: Real toasted nuts bring a richer, more natural flavor than bottled syrup.
- Coffeehouse versatility: Use it in lattes, cold brew, matchas, cold foam, or even drizzle it on oatmeal and french toast.
- Budget-friendly: A single batch costs just a few dollars and makes enough for dozens of drinks.
Ingredients
- ½ cup chopped pecans
- ¾ cup granulated sugar
- ¼ cup brown sugar, packed (light or dark)
- 8 ounces water
- ½ teaspoon kosher salt
- ½ teaspoon caramel extract
- ½ teaspoon vanilla extract
- ¼ teaspoon brown butter extract (or regular butter extract)

How to Make Toffee Nut Syrup
1. Toast the pecans
In a medium saucepan, add your chopped pecans. Toast over medium heat for 3–5 minutes, stirring frequently, until fragrant. This step gives the syrup its signature toasted-nut depth — don’t skip it!
2. Simmer the syrup
To the toasted pecans, add in the granulated sugar, brown sugar, water, and salt, and bring the mixture to a simmer. Simmer for 10 minutes to allow the flavors to infuse, and to thicken the syrup mixture.
3. Strain
Pour the syrup through a fine mesh strainer to separate the chopped pecans. (set aside the chopped pecans, don’t throw them away!!)
6. Add finishing touches
While the syrup is still warm, stir in the caramel extract, vanilla extract, and brown butter extract.
7. Cool and store
Let the syrup cool completely before adding a lid and storing in the fridge for up to 3 weeks.

How to Use Toffee Nut Syrup
This syrup tastes amazing in just about everything, but here are a few of my favorite ways to use it:
- Toffee Nut Latte: Add 1-2 tablespoons syrup to your espresso + steamed milk, then top with whipped cream and toffee bits or caramel drizzle.
- Iced Toffee Nut Cold Brew: Stir 2 tablespoons syrup into cold brew, add ice, and finish with a splash of heavy cream or sweet cream cold foam.
- Holiday Twist: Mix it with mocha sauce for a Toffee Mocha vibe, or blend with white chocolate sauce for a festive treat.
- Non-Coffee Options: Add to hot cocoa, chai, or even drizzle it over pancakes or French toast.

Tips & Variations
- Nut-Free Option: Skip the pecans and use ½ teaspoon hazelnut or pecan extract instead.
- Sugar-Free Version: Use allulose and a brown sugar alternative.
Storage
Store your syrup in an airtight bottle or mason jar in the fridge for up to 3 weeks. Shake before each use if any natural settling occurs.
