Dutch Bros Cookie Butter Latte

Dutch Bros fall drinks are out, and the Cookie Butter Latte is stealing the show again this year! It’s rich, buttery, and perfectly spiced — like sipping a Biscoff cookie in latte form. If you don’t live near a Dutch Bros (or simply want to save a few dollars), you can make this cozy fall drink right at home with my Homemade Cookie Butter Sauce. It’s creamy, sweet, and gives the latte that signature Dutch Bros swirl without needing any expensive store-bought topping.

Dutch Bros Cookie Butter Latte Ingredients

  • 1-2 ounces Homemade Cookie Butter Sauce, plus more for topping: Dutch Bros uses a squeezable cookie butter topping, but my homemade version tastes even better. It’s made with cookie butter, sweetened condensed milk, whole milk, maple syrup, cinnamon, and a pinch of salt for that cozy, caramelized flavor. You can find the full recipe here. Use it to drizzle inside your cup, blend into the espresso, and top the drink for the perfect cookie butter finish. NOTE: A small and medium drink size get 1 ounce of cookie butter sauce, while a large gets 2 ounces.
  • 2-4 shots of Espresso (about 2.5 oz) — Don’t have an espresso machine? No problem — you can use instant espresso, a Moka pot, or a Nespresso. I have a full guide on 5 Ways To Make Espresso At Home. NOTE: A small and medium drink size get 2 shots while a large gets 4 shots.
  • 2% Milk: or any milk or half & half of choice. A small gets 4.5 ounces ounces, a medium gets 8.5 ounces, and a large gets 10.5 ounces of milk.
  • Ice: If you’re making the iced version, fill your glass with plenty of ice. For a hot latte, skip the ice and steam your milk.
  • Soft Top (aka Cold Foam): This sweet, fluffy layer is a Dutch Bros signature. Use the Rich’s On Top Soft Whip for an exact Dutch Bros Soft Top replica, or I’ll show you below how to make a version at home using vanilla syrup, milk, and heavy cream.

How To Make A Dutch Bros Cookie Butter Latte At Home

Iced Cookie Butter Latte

  1. Drizzle the Homemade Cookie Butter Sauce around the inside of your cup (about 1/2-1 ounce), and then add another 1/2-1 ounce to the bottom of the cup.
  2. Brew the espresso shots and pour them over the sauce. Stir well to fully combine and dissolve the cookie butter sauce.
  3. Add your milk of choice and ice, leaving room for the soft top.
  4. Pour the Rich’s On Top Soft Whip over the ice OR for a homemade version: In a small cup, combine 1 tbsp vanilla syrup, 2 tbsp milk, and 3 tbsp heavy cream. Froth with a handheld milk frother until thick and creamy and pour the homemade soft top over the ice.
  5. Finish with another drizzle of cookie butter sauce and enjoy.

Hot Cookie Butter Latte

  1. Drizzle the Homemade Cookie Butter Sauce around the inside of your cup (about 1/2-1 ounce), and then add another 1/2-1 ounce to the bottom of the cup.
  2. Brew the espresso shots and pour them over the sauce. Stir well to fully combine and dissolve the cookie butter sauce.
  3. Steam or froth your milk until warm and velvety, then pour it over the espresso-sauce mixture.
  4. Pour the Rich’s On Top Soft Whip over the ice OR for a homemade version: In a small cup, combine 1 tbsp vanilla syrup, 2 tbsp milk, and 3 tbsp heavy cream. Froth with a handheld milk frother until thick and creamy and pour the homemade soft top on top of the hot latte.
  5. Finish with a drizzle of cookie butter sauce and enjoy.

Tips for the Best At-Home Cookie Butter Latte

  • Use my Homemade Cookie Butter Sauce — it melts perfectly into espresso and stays glossy when drizzled on top. Pro tip: microwave the sauce for 10-15 seconds for the ultimate drizzling texture!
  • Taste and adjust: If you love a stronger cookie flavor, add an extra ½ ounce of sauce to your espresso.
  • Make it dairy-free: Use oat milk or almond milk and coconut whipping cream for the soft top.
  • Want a breve? Swap milk for half & half for a rich, buttery version.
  • Turn it into a freeze: Blend 1–2 tbsp Cookie Butter Sauce, 2 tsp instant coffee, 8 oz milk, ½ cup ice, and ¼ tsp xanthan gum for a freeze version.

Dutch Bros Ratios

I personally prefer a less creamy, more coffee forward, less sweet version of this drink, so the recipe I provide is a bit different than the typical Dutch Bros ratios. If you’re wanting to most accurately replicate the Dutch Bros Cookie Butter Latte at home, follow these ratios!

More Cookie Butter Drink Ideas

  • Cookie Butter Breve: swap milk for half & half for a decadent, coffeehouse-level treat.
  • Cookie Butter Cold Brew: swirl cookie butter sauce in a glass, add cold brew + cream, and top with soft top and drizzle.
  • Cookie Butter Iced Coffee: same as above but made with brewed coffee and ice.

How To Steam Milk For a Hot Latte

All hot lattes require steamed milk as one of the ingredients. To steam milk at home, you have a few options:

  1. Steam Wand: If you have an espresso machine with a steam wand attached to it, watch this Milk Steaming Video Tutorial for how to steam milk! You simply add milk to a milk frothing pitcher, insert the tip of the steam wand into the milk, and create air bubbles, heat and texture to create perfect, velvety steamed milk at home!
  2. Electric Milk Frother: Add your milk to an electric milk frother, and select the hot setting. The milk frother will heat the milk as well as create a thick and foamy texture. The texture will be a little different than a typical steam wand, but it’s very similar and pleasant, and a great option if you don’t have an espresso machine with a steam wand.
  3. Handheld Milk Frother: Add cold milk to a large coffee mug and place the mug in the microwave for 60 seconds. Alternatively, you can heat up milk in a pot on the stove until warm, just make sure to constantly stir it so it doesn’t burn. Once your milk is warm, insert a handheld milk frother into the warm milk. Froth the mixture until the milk doubles in size and becomes bubbly and frothy, and you have steamed milk for your hot latte!

Note, for an iced latte, you do not need to warm or steam the milk. Simply skip this step, and use cold milk straight from the fridge.

    Dutch Brothers also uses salted Carmel syrup in their cookie butter. At least that’s what the barista told me when I was sad it was gone for the season.

    I love this! I was reading about how to make it a freeze, and was wondering if the xanthan gum was necessary? What exactly does it do?

      Thank you so much!! The xanthan gum acts as a thickener and binding agent so the blended drink comes out much more homogenous and creamy in texture. You could absolutely skip it, you’ll just notice the texture is more icy and chunky rather than smooth and creamy, and the liquid tends to separate from the ice a bit. But the flavor will be the same with out without, it’s just the texture that changes with the xanthan gum! 🙂

        See the section toward the top titled “Cookie Butter Latte Ingredients” where I share all the different options 🙂 You can buy the Biscoff Cookie Butter Drizzle (which is what Dutch Bros uses but it’s PRICEY) or just melt regular Biscoff (or whatever brand) cookie butter in the microwave to get it that perfect drizzling texture for your own Cookie Butter Drizzle!

          My cookie butter hardens once it’s in the cold drink. I see the regular biscoff cookie butter. How do I stop this from happening?

            It’s inevitable due to physics!!! You can buy the more expensive cookie butter drizzle option mentioned in the recipe! That one has slightly different ingredients making it ideal for drinks and liquids but regular cookie butter naturally turns back into a solid state when chilled again 🙂
