Here’s what you’ll need to recreate the Dutch Bros favorite:

  • 1/2 – 1 tablespoon Torani Pumpkin Pie Sauce – Dutch Bros uses this exact sauce! You can also DIY with equal amounts of my homemade pumpkin syrup + sweetened condensed milk.

  • 2 shots Espresso – made using your preferred method (machine, Nespresso, moka pot, AeroPress, or instant espresso powder).
  • 6 ounces Half & Half – the base of a breve (richer and creamier than milk).

How to Make Dutch Bros Caramel Pumpkin Brûlée Breve at Home

Iced Version

  1. To a cup, add the salted caramel syrup and pumpkin pie sauce.
  2. Brew 2 shots of espresso directly over the syrup and sauce, and stir to dissolve.
  3. Add half & half and ice, leaving room for the toppings.
  4. Pour the Dutch Bros Soft Top over the breve, or to make a homemade soft top: In a small cup, froth vanilla syrup and heavy cream with a handheld frother for 15 seconds (or until thick) and pour over the breve.
  5. Drizzle pumpkin sauce overtop and sprinkle with raw sugar.

Dutch Bros Ratios

Hot Version

  1. To a mug, add salted caramel syrup and pumpkin pie sauce.
  2. Brew 2 shots of espresso directly over the syrup and sauce, and stir to dissolve.
  3. Steam or froth half & half until hot and velvety, then pour over the espresso mixture.
  4. Add/Make soft top (vanilla syrup + heavy cream, frothed).
  5. Top the drink with soft top, pumpkin drizzle, and raw sugar.

How to Steam Milk at Home

All hot breves require steamed milk as one of the ingredients. To steam half & half at home, you have a few options:

  1. Steam Wand: If you have an espresso machine with a steam wand attached to it, watch this Milk Steaming Video Tutorial for how to steam milk or half & half! You simply add milk or half & half to a milk frothing pitcher, insert the tip of the steam wand into the milk, and create air bubbles, heat and texture to create perfect, velvety steamed milk or half & half at home!
  2. Electric Milk Frother: Add your half & half to an electric milk frother, and select the hot setting. The milk frother will heat the half & half as well as create a thick and foamy texture. The texture will be a little different than a typical steam wand, but it’s very similar and pleasant, and a great option if you don’t have an espresso machine with a steam wand.
  3. Handheld Milk Frother: Add cold half & half to a large coffee mug and place the mug in the microwave for 60 seconds. Alternatively, you can heat up half & half in a pot on the stove until warm, just make sure to constantly stir it so it doesn’t burn. Once your half & half is warm, insert a handheld milk frother into the warmed half & half. Froth the mixture until the milk doubles in size and becomes bubbly and frothy, and you have steamed half & half for your hot latte!

Note, for an iced breve, you do not need to warm or steam the half & half. Simply skip this step, and use cold half & half straight from the fridge.

Variations

  • Latte Version – Swap half & half for milk (like 2%, almond, oat, etc).
  • Freeze (Blended) – Blend 1 tablespoon pumpkin sauce, 1 tablespoon salted caramel syrup, 2 teaspoons instant coffee, 8 oz milk, 1 cup ice, and ¼ tsp xanthan gum. Top with soft top, pumpkin sauce drizzle and raw sugar.
  • Cold Brew / Iced Coffee – Stir sweeteners into iced coffee or cold brew, add half & half and ice, then finish with soft top, pumpkin sauce drizzle and raw sugar.

Lighter & Dairy-Free Options

  • Lower sugar: Use Torani sugar-free syrups (sugar free pumpkin pie syrup and sugar free salted caramel syrup) and swap sugar free whipped topping for the soft top.
  • Lower calorie: Use sugar free syrups along with the Nutpods Dairy-Free Half & Half instead of regular half & half, and omit the soft top.
  • Dairy-free: Use dairy free half & half for both the breve and the soft top.

How to Make Soft Top at Home

Dutch Bros’ soft top is their version of cold foam — sweet, creamy, and a little thicker than whipped cream. You can buy the exact same brand off of Amazon, but it is pretty pricey since you have to buy a pack of 6. Here’s how to make it at home:

  • Classic: 2 tablespoons heavy cream + 1 tablespoon vanilla syrup. Froth with a handheld milk frother until thick and fluffy.
  • Dairy-free: Combine 2 tablespoons dairy free heavy cream + 1 tablespoon vanilla syrup and froth with a handheld milk frother until thick and fluffy.

    What exact ratio would be for the same drink but with chai at Dutch bros? For the small, medium and large drink?

      Do the same amount of sweetener and cold foam, and then do 4 oz both of: milk and chai concentrate for a small, 6 oz of each for a medium, and 8 oz of each for a large!     When I made the cold brew didn’t layer right. Do I need to add ice?

      There’s not much layering that should be happening aside from the soft top being poured on top- if it didn’t layer, adding ice can help as well as frothing longer or using more heavy cream if you made the soft top from scratch 🙂
